Adding dried herbs is a great way to add flavor to your cheeses. (We do not recommend adding fresh herbs or garlic because they can carry other microbes that can cause problems or contamination during aging.) Herbs de Provence is a delicious combination of herbs ( Rosemary, Thyme, Savory, Fennel Seed, Basil, Lavender and Marjoram) which has been used to flavor soft cheeses for many years. It has a wonderfully delicate flavor and can be used in Fromage Blanc, Chevre, Fromagina and many others. Try rolling your mozzarella in it. If stored tightly sealed in a cool, dry place, these herbs will last indefinitely. 2 oz. package. French Herbs is a delightful mixture of Chives, Parsley, Basil, Rosemary, Marjorman and Tarragon. Usage will vary from recipe to recipe. French Herbs can be layered in the curds, mixed into soft, spreadable cheeses, or rolled on the outside of a finished cheese.
