Thermophilic (heat-loving) bacterial culture of streptococcus thermophilis and lactobacillis bulgaricus is used in making cheeses when curd is cooked at temperatures up to 132 degrees. Use to make Italian cheeses such as mozzarella, parmesan, provolone, and Swiss cheese.
