Mesophilic (moderate temperature-loving) bacterial culture of streptococcus lactis, streptococcus cremoris, and streptococcus diacetilactis is used in making cheeses when the curds are not warmed to over 102 degrees during cooking. Use this culture to make cheddar, Gouda, Monterey Jack, Stilton, Muenster, blue, farmhouse and other hard cheeses.
